When I was in the hospital for the birth of my little boy, and again when he was under Bili lights, I had a blueberry scone every morning along with a yogurt, granola, fresh fruit and juice. I loved my scones! I looked forward to having them, and that was the one thing I miss about being in the hospital! So, today's Sinful recipe is blueberry scones! Mmmmmmm! I'm going to make some, horde some, freeze some, and not share! Alright, yes, I will share. But only because I
don't want little puppy dog eyes being made while I savor each bite am a nice mom and because I know the kids will love them too!
Blueberry Scones
- 2 cups all-purpose flour
- 1/4 cup packed brown sugar
- 1 tablespoon baking powder
- 1/4 teaspoon salt
- 1/4 cup butter, chilled
- 1 cup fresh blueberries
- 3/4 cup half-and-half cream
- 1 egg
- Preheat oven to 375 degrees F (190 degrees C).
- Cut butter into mixture of flour, sugar, baking powder, and salt. Add blueberries and toss to mix.
- In separate bowl beat together cream and egg, and slowly pour into dry ingredients, stirring with rubber scraper until dough forms. Knead just until it comes together, 3 or 4 times. Don't overhandle.
- Divide dough in half. On lightly floured board, shape each half into a 6-inch round. Cut into 6 wedges.
- Bake on ungreased sheet about 20 minutes at 375 degrees F (190 degrees C). Serve warm!!

Ok, this might seem like a silly question, but what is a scone? Is it more like a muffin or a cookie, or inbetween? A biscuit? I have never made one, or had one, and I am curious!
Yum!
I would freeze them and find a way to eat them without sharing...when they are asleep or I'd hide in the closet or something.
